How does this card resolve practically in an official duel?
Considering it as a side option, I don't want my judge shooting me.

It resolves as well any other "random" event in this game.
I actually wish Yu-Gi-Oh would stop using random effects, or at least give a defined ruling on how it works.
There is no such thing as random in a real world game.
You can probably have them fan out all their Fusions face-down and select 2.

If the opponent has no Extra Deck, you cannot activate it.
I think as for knowing whether or not they actually have Fusion Monsters, it might have to work on the opponent being honest.
If you don't think they are being truthful, I suppose you'll just have to call a judge to check for you.

Your opponent takes all their fusion monsters facedown, and you randomly choose 2 to send to the graveyard. You will have to ask your local judge if your opponent has to reveal their extra deck to show that all fusion monsters are in the pool to be selected randomly. In the OCG, it is not necessary to do so unless you suspect that they are being dishonest, but no such rule exists in the TCG. And as it goes for any grey line, ask your local judge how they would rule it.
